Mangalitsa back fat is added to the incredibly lean Eridge Park venison for this salami. A subtle touch of garlic and the heat of ground black pepper give complexity to the incredible flavour of the meat.

Ingredients: venison, pork fat, garlic, pepper, sugar, sodium nitrate, sodium nitrite & culture starter.
