MANGALITSA PORK CHOPS

Succulent pork chops from our woodland-reared Mangalitsa pigs. The prime loin normally goes to our air-dried lomo, so when we can spare a few chops they sell out quickly.

Sear all over, then cook until the fat has properly rendered. Rest well before serving.
