Succulent pork chops from our woodland-reared Mangalitsa pigs. These are rarely available as this prime loin is normally reserved for our popular air-dried Lomo. Occasionally we can spare one for chops so when they come up grab them quick as they get snapped up fast. Sear all over then cook until all of that incredibly flavoursome fat is properly rendered. Absolutely delicious!
