Our pancetta is made using prime belly from a one year old Mangalitsa pig, dry cured in a complex blend of herbs and spices then air dried. The resulting flavour is rich and succulent, providing an indulgent alternative to bacon for a variety of dishes and ideal for crowning roasted game birds.
